Lavender Simple Syrup

Adopted for SOEL Farm by yours truly after checking and testing a few internet recipes.

  1. Combine one cup of sugar with one cup of water in a pot, heat until the water boils and the sugar dissolves.

  2. Add a half cup of lavender buds and flowers (the more flowers in the mix, the more intense color you will get).

  3. When the water starts to boil again, take it off the stove, and let cool for a few hours.

  4. Strain the lavender and enjoy!

Some final thoughts: the commonly seen ratio of 2 cups sugar to 1 cup water proved far too sweet, and while many recipes call for just a spoonful of lavender, you can hardly taste it like that - I wanted some nice, strong flavor.
