Many of us were told to "eat our greens" as children. Now, new research suggests that we should eat our microgreens. According to MedicalNewsToday, the red cabbage variety of this tiny vegetable may reduce the risk of cardiovascular disease (Dec 30, 2016).
Though small in size, studies have suggested that microgreens are big in nutrients. Another study found that the tiny leaves of microgreens have up to 40 times the amount of nutrients (such as vitamins C, E, and beta-carotene) relative to the leaves of their mature counterparts.
